Technical stages for Ice cream base preparation :
1 Prepare all the ingredients. | |
2 In a saucepan, bring the milk to a boil. | |
3 Add the crème fraîche. | |

5 Add the caster sugar. | |
6 ... and whisk the mixture until white in colour. | |
7 Add the boiling milk and crème while stirring. | |
8 Cook very slowly on a hob or on very low heat. The use of an induction hob is very useful for this kind of delicate cooking. Constantly stir using a wooden spatula. The mixture should coat the wooden spoon. | |
9 When finished, sieve the mixture using a chinois or a fine sieve. | |
10 Leave to cool. Store in a cold place. |
